Salmon with New Potatoes

This simple yet tasty recipe is suitable for all seasons - serve with a crisp salad in summer and a bouquet of roasted winter veg during those longer nights.  Serves 2.  


300g salmon fillet
250g new potatoes, halved
1 shallot, finely chopped
4 spring onions, finely chopped
50g fresh sage, finely chopped
50g butter
Sage leaves, to garnish


1.Boil the potatoes until they are soft. Cut the salmon into 4 pieces
2.Cut 2 large pieces of aluminium foil. Divide the salmon, potatoes, onions, shallots and sage between each piece. Top with butter and season with salt and pepper
3.Make each piece of foil into a parcel and place them under a hot grill for 15 minutes
4.Open the packages before serving and top with some fresh sage leaves
