Simple Smoked Haddock
This deliciously rich recipe provides a quickly prepared dish that works well as a main or, served in individual ramekins, an impressive starter. Serves 2 as a main or 4 as a starter.
500g Pale smoked haddock
4 fresh vine tomatoes (remove skin and seeds, cut into small - or use tinned chopped tomatoes to speed things up!)
250ml whipping or double cream
120 grams cheddar cheese grated
Salt and black pepper
Skin the haddock and place on the bottom of an oven proof dish. Scatter the chopped tomatoes on top and season. Then add ½ the cheese to the cream and pour on top. Finish with a sprinkling of grated cheese.
Finally bake in preheated over 180 deg for 25 minutes and serve with boiled potatoes and a green vegetable, samphire grass or salad.I want to make this! >
