Jack Taylor started the business in 1950 with the ambition to provide customers and restaurants with the freshest fish available, only selecting the freshest fish from the vessels last catch of the day.
This philosophy still rings true today, 65 years on, with the current team committed to delivering the freshest fish available straight from the boats docking in Peterhead direct to our shop within 24 hours.
The company was subject to a family buy out in May 2013 by the successive generation, Joel Watt and Mark Stephen. With their long family history in the seafood industry they have re-invigorated the business with their fresh approach. They have taken what was historically a wholesale business serving the restaurant industry and opened up the concept to you, the consumer.
Jack Taylor offers an extensive array of seafood ranging from classic cod to more exotic and seasonal species including rock turbot, monk’s tail and hake, with over 20 species of fish and seafood available to buy online.
Our experienced team all have a long family heritage in the seafood industry and were brought up on the door step of Scotland’s finest fishing ports. Everyone has a real passion for the industry, reflected through the decision to invest our careers in the trade.
Peterhead Fish Market, regarded as one of the best white fish ports in Europe, is served by a number of skippers and their crews braving the harsh conditions of the North Sea to bring the very best product daily.
Joel Watt and Mark Stephen purchased the family business in 2013, with a vision to grow it, not only within the wholesale market, but bringing their premium fresh produce direct to customers.
Both have worked as fishermen in the past, serving in the icy cold waters of Scotland’s North Sea. They have brought this hands on experience to the business and their ambition for Jack Taylor has already seen the brand come to life.
Joel and Mark are supported by a highly skilled team of fish filleters who have spent years mastering their skill – the result is a beautiful hand-crafted artisan product which Jack Taylor is proud to sell.
Nathan MacMillan joined the company in 2015 as their Retail Business Manager. Nathan, a fisherman’s son, has spent his career in food retail and brings a wealth of knowledge of this sector to the company.
The Jack Taylor Fish Shop in Bucksburn opened in June 2015 and currently employs 2 Retail Assistants.

We only source fish from boats that are part of the Responsible Fishing Scheme and where possible we ensure that the species we provide are MSC certified. During our production process we use all possible parts of the fish – with the fillets, cheeks and tongues being sold to customers, and the remainder being broken down into powdered protein – there is therefore no wastage in our processing. In our Aberdeen shop, any food waste is segregated and turned into compost and we recycle all other waste materials where we can.
In our Fraserburgh factory, solar panels are used to partly offset our carbon footprint and generate 15% of our annual electricity usage.
