Lemon Sole in a Creamy Sauce

This delicious recipe is very quick and easy.  It works well with halibut and haddock, too! Serves 2.  

ingredients

500g Lemon sole fillets

1 medium onion (finely diced)

250 ml double cream

3 slices of bread made into bread crumbs

Butter

Cheddar cheese

Salt & pepper

Method

1. Cover the bottom of an oven proof dish with diced onion

2. Place fish on top (roll the fish up)

3. Season with salt & pepper

4. Cover with cream and breadcrumbs mixed with the cheese

5. Add a knob of butter on each piece of fish

6. Place in a preheated oven at 180 degrees (gas mark 4) for 25 minutes

7. Serve with potatoes & vegetables
